Japan's renowned sushi chef Jiro Ono has reached 100 years and remains active in his craft. The owner of Tokyo's compact Sukiyabashi Jiro still prepares sushi daily, maintaining exacting standards. His longevity and mental sharpness have drawn attention from culinary peers and health specialists, who note his routine may offer insights into healthy ageing.

The chef behind Japan’s celebrated sushi

Ono opened Sukiyabashi Jiro more than half a century ago; the restaurant later earned three Michelin stars. Dignitaries and diners worldwide — including former U.S. President Barack Obama, who praised the food — have recognised the restaurant's quality. Despite his age, Ono still checks on the restaurant and monitors each plate closely.

Those who meet him describe a disciplined, modest craftsman with intense concentration. He attributes much of his wellbeing to purposeful work and staying engaged.

His life and approach have inspired people beyond the culinary world — offering a model for purposeful, healthy living.

1. Keep moving and stay active

At 100, Ono continues to rise early and spend time in the kitchen. He credits routine and activity with keeping him fit. Specialists say regular physical and mental activity can slow aspects of ageing; Ono’s daily tasks — slicing fish, forming rice, and attending to details — serve as gentle physical work and sustained mental focus.

Similar results come from everyday movement: walking, household chores, or tending a garden all help maintain cardiovascular health and flexibility.

2. Eat light and balanced meals

Ono favours modest portions and avoids heavy eating. This echoes the Japanese practice of Hara Hachi Bu — stopping at about 80% fullness. His typical meals centre on fresh fish, rice, vegetables and miso soup, offering nutrients with low saturated fat.

Medical professionals say such a diet supports digestion, heart health and weight control — important factors for longevity.

3. Prioritise quality over speed

Ono is known for his deliberate, careful technique. He has said that loving your work drives continuous improvement. That focus can lower stress and foster calm.

In a fast-paced environment, slowing down to do tasks properly improves mental wellbeing. Mindful attention to work reduces anxiety and can increase satisfaction.

4. Follow routine and maintain discipline

For decades Ono has kept consistent habits: early rising, concentrated work and regular sleep. He seldom departs from that schedule. Such discipline helps regulate the body's internal clock, supporting better rest, energy levels and digestion.

Research indicates that steady daily routines for eating, sleeping and activity are linked to longer, healthier lives.

5. Keep learning and stay humble

Even at 100, Ono says he continues to learn and tells apprentice chefs there is always room to improve. His humility and curiosity reflect an alert mind.

Health experts note that learning new skills, reading and social interaction help keep the brain engaged and may lower dementia risk.

Jiro Ono’s career is about more than cuisine — it highlights the value of purpose. His example suggests that meaningful work, measured habits and modest living contribute to graceful ageing.

As he marks his 100th year, Ono demonstrates that sustained focus, sensible eating and lifelong learning can support longevity.
