Expert Warns of Risks with Leftover Rice Handling

Leftover rice often accompanies many meals, but a warning from nutritionist Dr. Amy Shah emphasizes that improper handling can lead to foodborne illnesses.

Many assume rice is safe if it appears and smells acceptable the next day. Yet, Dr. Shah notes that harmful bacteria can proliferate if rice isn’t stored correctly. “The primary error is allowing cooked rice to remain at room temperature throughout the day,” she stated. “You might think it’s safe, but a single incident of Bacillus cereus food poisoning can be quite serious.”

According to Dr. Shah, refrigeration is vital. “Cool your rice swiftly after cooking, then store it in the fridge overnight. Some starch converts to resistant starch, beneficial for gut health and blood sugar management.” The risk arises when rice sits out for extended periods, facilitating bacterial growth.

She suggests adhering to a straightforward process for safety: cook the rice, cool it promptly, place it in an airtight container in the refrigerator, and only reheat it once before consumption. This practice can help avert severe food poisoning and minimize the need for emergency medical attention.

This advice holds particular significance for students, professionals, and anyone used to meal prepping. “This was a fundamental food safety principle taught in medical school,” Dr. Shah remarked. “It's a crucial reminder for all of us.”

By employing correct storage and reheating methods, you can safely enjoy leftover rice and protect your health.
