Thanksgiving is a time for joy in the United States, but it often leads to excessive eating. Studies reveal that the average American might gain up to five pounds during this festive season, mainly due to rich Thanksgiving meals that can skyrocket to nearly 4,500 calories. However, through simple recipe tweaks, families can enjoy a healthier, yet still delicious, Thanksgiving. To aid in this endeavor, South Florida's dietitian Monica Auslander-Moreno and fitness guru Sunny Marz provided CBS with some easy recipes that promise great taste with fewer calories.
Cranberry sauce is a staple at Thanksgiving; it brings color and sweetness to the table. However, many recipes call for excessive sugar, making it extremely sweet. Auslander-Moreno suggests a healthier take that maintains the dish's flavor. Her version combines 12 ounces of cranberries, one cup of cranberry juice, one cup of pure maple syrup, three tablespoons of orange juice, one tablespoon of honey, one tablespoon of vanilla, and a dash of cinnamon. After blending these ingredients, heat until boiling, then reduce the heat to simmer for about ten minutes to let the cranberries soften and release their natural flavors. If desired, a touch more honey can enhance the sweetness. The cinnamon not only offers warmth and a delightful aroma but also boosts anti-inflammatory properties. This exquisite alternative boasts a mere 150 calories per serving, dramatically lower than the 418 calories in typical store-bought cranberry sauce.
Green beans are another Thanksgiving favorite that can be enjoyed in a healthier manner without sacrificing flavor. Fitness expert Sunny Marz recommends an easy preparation involving olive oil, fresh garlic, green beans, sliced almonds, salt, and pepper. Start by toasting the almonds in a skillet until they become golden and fragrant. Next, sauté the green beans with olive oil and minced garlic, then add the toasted almonds along with salt and pepper. This bright dish is crunchy and flavorful, enhancing the meal's fiber and healthy fat content without heavy sauces.
These modest recipe alterations illustrate that Thanksgiving dishes can be both delicious and health-conscious. By thoughtfully adjusting ingredients and opting for natural flavors, families can celebrate the holiday without the burden of overindulging, creating a more enjoyable and manageable festive season.
