Columnist Vir Sanghvi highlights the evolution of these bar snacks. Once, drinking was paired with unadorned options such as papad or peanuts. Bars in select cities served masala peanuts with beer, while fancier establishments opted for cashews or olives. Historically known as “Permit Rooms,” these bars required a permit for alcohol purchases.
Those simpler times are behind us. Today's younger clientele demands a vibrant selection beyond mere peanuts and papad. Modern bars strive to provide a culinary experience that resonates with contemporary tastes influenced by global trends.
A notable example in Bengaluru showcases this change, with Chef Adithya Kidambi leading the way. He has reimagined classic bar snacks into modern delights, such as enhanced cheese balls that nod to traditional fare while boasting fresher flavors. This evolution reflects how chefs are blending traditional Indian tastes with international inspirations to elevate bar dining.
Sanghvi states that the number of bars in India is at an all-time high. With many new establishments designed around the bar experience, food is now crafted to elevate the drinking occasion. This trend illustrates the dynamic shift in Indian dining culture.
